Before we begin, it’s important to note that there are two main categories of cherries: sweet cherries and tart or sour cherries. Each of these species contains a number of different varieties which we won’t get into (there are just too many)!
The difference between sweet and tart cherries is the nutritional content. Sweet cherries are (you guessed it) much sweeter with a higher carbohydrate content. Tart cherries, however, contain a much higher nutrient content with 50% more vitamin C per serving and 20 times more vitamin A![1]
